Our Olive Oil — Liquid Gold from the Heart of Umbria.
Our olive grove is something truly special. Wonderfully wild and untouched for several years, it is a living, breathing natural paradise where mint, pimpinella and an abundance of wild plants and flowers grow freely beneath the ancient trees. Our three sheep roam the grove quietly and faithfully, naturally nurturing the soil and keeping the grounds in perfect balance, while our free-roaming chickens do what they do best — pecking, foraging and bringing the land to life. Apart from annual pruning, nature here is left entirely to its own beautiful devices.
We are proud to say that our olive oil is produced with full organic practices — and while our official organic certification will be available from 2027 due to conversion timelines, the land and the oil speak for themselves.

Our olives are harvested by hand and cold-extracted using the very latest DMF technology — a modern, water-free process that preserves every drop of the oil's original flavour, aroma and extraordinary health properties. Additional filtration ensures that all naturally occurring antioxidants and polyphenols are retained in their full potency.
This is nothing like the bland, sweet "olive oil" lining supermarket shelves, which loses the vast majority of its health benefits during industrial manufacturing. Our oil is rich, complex and alive — exactly as nature intended.
The oil mill operates with a low environmental impact, using minimal water and low temperature processing to reduce energy consumption at every stage. From grove to bottle, sustainability guides every decision we make.
We currently bottle our oil in 500ml bottles to guarantee the highest possible freshness and quality.

It All Begins With a Dream
A longing for something different. Something slower, more meaningful, more connected to the earth.
For us, olive groves had been on our minds for years — and in early 2024, that dream became beautifully real. We took over a farmhouse and lovingly brought it back to life, along with 400 magnificent olive trees that had been waiting patiently for us all along.
What followed was the discovery of a new passion — and a deep, genuine appreciation for the extraordinary gift that is olive oil. And this, we know, is just the beginning.
Because we are committed to doing things the right way, we are currently in conversion to certified organic and biodynamic farming. The label takes time — but our practices do not wait for paperwork. Every decision we make on this land is organic, regenerative and rooted in respect for nature.
