It All Begins With a Dream
A longing for something different. Something slower, more meaningful, more connected to the earth.
For us, olive groves had been on our minds for years. Then, in early 2024, that dream became beautifully real.
We took over Casale San Cristoforo and its 14 hectares of Umbrian countryside, including around 400 olive trees that had been part of this landscape for years.
What followed was the discovery of a new passion — and a deep appreciation for the extraordinary simplicity of olive oil. From caring for the trees through the seasons to harvesting the olives and seeing the first oil come to life, we began to understand just how much land, time and care can be held in a single bottle.
And this, we know, is only the beginning.
Our farm is officially in conversion to certified organic farming. Certification takes time, but our commitment to the land does not. We already farm according to organic, regenerative and permaculture principles, with a focus on healthy soil, biodiversity and working with nature rather than against it.
Our olive grove is intentionally diverse and alive. Wild herbs and flowers grow among the trees, creating a habitat for pollinators, insects and wildlife, while the landscape changes with every season.
Our extra virgin olive oil is 100% Umbrian — produced from the olives grown here at Casale San Cristoforo, and made with care from grove to bottle.

Our Olive Oil
Liquid Gold from the Heart of Umbria
Our olive grove is something truly special.
Wonderfully wild and naturally diverse, it has been left largely undisturbed, allowing mint, pimpinella and an abundance of wild herbs and flowers to grow freely beneath the trees.
Our three sheep quietly roam the grove, naturally contributing to the life of the land, while our free-ranging chickens forage among the trees. Apart from the annual pruning and the care the olive trees require, we leave as much of the grove as possible to nature.
It is this sense of life and biodiversity that makes our olive grove feel so special to us — and it is the landscape from which our oil begins.
Harvested by Hand. Extracted with Precision.
Our olives are harvested by hand and taken to the mill soon after picking, where they are cold extracted using modern DMF technology.
The water-free extraction process and careful temperature control help preserve the natural aromas, flavours and character of the freshly harvested olives. The oil is then filtered to help maintain its freshness and stability.
The result is an extra virgin olive oil that is fresh, complex and distinctly Umbrian — with the character of the land it comes from.
Farming With Nature
Our farm is officially in conversion to certified organic farming, with certification expected from 2027.
But our commitment to the land began long before the paperwork. We farm according to organic, regenerative and permaculture principles, with a focus on healthy soil, biodiversity and working with nature rather than against it.
The olive grove is part of this larger ecosystem. Wild plants, flowers, insects, birds and animals all have their place here, and we believe that a healthy farm begins with a healthy, living landscape.

We bottle our extra virgin olive oil in 500ml bottles to help preserve its freshness and quality.
It is 100% Umbrian, produced from olives grown here at Casale San Cristoforo.
The Goodness of Extra Virgin Olive Oil
Naturally Good
Extra virgin olive oil is much more than a beautiful ingredient. It is naturally rich in monounsaturated fat, vitamin E and polyphenols — plant compounds with antioxidant properties that are an important part of what makes extra virgin olive oil so special.
The polyphenols also contribute to the oil's character: its freshness, complexity and gentle peppery finish.
At the heart of the Mediterranean way of eating, extra virgin olive oil is enjoyed every day — drizzled over vegetables and salads, paired with good bread, or simply used to bring a little more flavour to a meal.
We harvest our olives by hand and cold extract them soon after picking, using a modern, low-water process designed to preserve their natural flavour, aroma and valuable compounds.
